You are going to love this recipe! It’s perfectly delicious and perfectly healthy! Just three simple ingredients and you’re ready to go-pineapple, strawberries and coconut milk!
Pineapple is an incredible that we should all be eating more of! You can freeze your own, or simply buy it frozen from the store. Pineapples have been noted for their Vitamin C content and antioxidants, which support the immune system. Also, this super fruit is rich in the enzyme Bromelain, which has been shown to be anti-inflammatory and to aid in digestion.
They’re in season right now (peak pineapple season is March through June), so this is a great time to buy them fresh and save some frozen for later for a super sweet treat later in the summer.
- 16 oz. frozen pineapple
- 2-4 Tablespoons coconut milk (+ more as needed)
- 4-5 fresh strawberries
- Add the frozen pineapple, fresh strawberries and coconut milk to a food processor and process until smooth. Serve immediately.
- If you want to save some for later, store in a ziplock bag in the freezer.
