Chocolate Macadamia Ganache

I love chocolate so much that I end up wearing it all day when I’m making a dessert recipe! Yesterday I rolled into work and one of my co-worker stopped me and said “Hey you’ve got something all over your back! Is it chocolate?”

I guess that just comes with the territory.

I am a certified chocolate fiend. I think I can stick with a clean diet as long as I can have chocolate.One good thing about this recipe is that it freezes well and is good for over a week in the frig, so when you feel that midnight craving coming on, it’s there for you!

This raw vegan ganache is pretty easy too, so you’ll have plenty of time to lick the spoons.

Salted Dark Chocolate Macadamia Ganache

Rich dark chocolate ganache made with creamy macadamias and and a touch of sea salt

Ingredients
  • FOR THE CRUST:
  • 8 dates pitted
  • 1 cup raw macadamia nuts
  • 1 cup almond meal
  • 1 teaspoon vanilla
  • ¼ teaspoon sea salt
  • FOR THE FILLING:
  • 1 cup macadamia nuts, soaked overnight
  • ¾ cup raw cacao powder
  • ½ Fuji apple, peeled, seeded and chopped
  • ½ cup coconut oil, melted
  • ½ cup agave
  • 1 tablespoon lecithin
  • ¾ teaspoon sea salt
  • Water as needed (maybe ¼ cup)
  • 1 teaspoon sea salt
  • 1 teaspoon vanilla
Instructions
  1. FOR THE CRUST:
  2. Pulse the nuts and dates together in a food processor. Mix with the almond meal, salt and vanilla.
  3. Press into a pan (I used a bread pan) lined in plastic wrap and press down firmly.
  4. Refrigerate until ready to use.
  5. FOR THE FILLING:
  6. Blend everything in a high powered blender. Add water only as needed to blend easily.
  7. Pour into prepared crust. Garnish the top with crushed macadamias.
  8. Refrigerate or freeze overnight.
