Kimchi Salad with Ume Plum Vinaigrette

  • 2 cups butter lettuce or spring mix
  • 2 carrots, peeled and cut into matchstick pieces
  • 1 sheet raw sushi nori, cut into thin strips
  • Other vegetables I highly recommend-cucumber, spicy sprouts, red cabbage, radish, avocado
  • sesame seeds as garnish
For the Ume Plum Vinaigrette;
  • ⅓ cup sesame oil
  • ½ teaspoon ume vinegar
  • ¼ cup maple
  • 1 Tablespoon apple cider vinegar
  • ¼ teaspoon ground ginger
  1. Mix dressing ingredients together in a bowl and whisk by hand.
