An elegant, healthy and flavorful rice dish that will quickly become a staple of your dinner time routine.
Ingredients
Kale Pesto
  • ½ cup pine nuts
  • 1 tablespoon nutritional yeast
  • ½ cup olive oil
  • zest and juice of 1 lemon
  • 2 cups packed kale leaves
  • 2 cups basil leaves
  • 2 cloves garlic
  • salt and pepper to taste
Green Rice
  • ½ cup jasmine rice
  • 1 cup water
  • 1 pinch sea salt
  • 1 tablespoon olive oil
  • 2 tablespoons chopped onion
  • 1 cup chopped kale
  • 1 cup chopped chard
  • ¼ cup kale pesto or quantity to taste (see recipe above)
  • ¼ cup basil leaves
  • salt and pepper to taste
Instructions
  1. Place all the kale pesto ingredients in a food processor and puree until smooth. Season to taste with sea salt and black pepper.
  2. For the green rice, place the rice, salt and water in a sauce pan. Bring to boil and then turn down the heat to extra low and cover with a tight fitting lid. Cook for 10 minutes covered and until all the water is absorbed. Fluff with a fork and allow to sit covered with the lid on.
  3. In a large sauté pan, place the olive oil and chopped onion over medium heat. Add the chopped kale and chard and cook for about 1 minute or until just wilted. Add the cooked rice and stir well. Add the pesto and stir well. Season to taste with sea salt and black pepper. Add the basil and divide between 2 plates. Drizzle with a little more of the pesto if desired.
  4. Serve immediately.
