What to eat for breakfast? That is a question I hear a lot from people who are just beginning to include more plant based food into their diet. Cereal/granola is one of those things that is great to have on hand-you can have it as a snack or as a healthy nutritious breakfast. This raw version is a great beginner dehydrator recipe and is very low in fat.
1 cup raw buckwheat groats, soaked 2 hours and rinsed very well before using
2 Tablespoons cacao powder
2 Tablespoons goji berries (optional)
2 tbsp ground flaxseed
1/3 cup sunflower seeds, soaked 2 hours
1/3 cup pumpkin seeds, soaked 2 hours
1/3 cup raisins
1/3 cup chopped apples
3 dates
½ cup water
1 tbsp coconut oil (melted) or flax oil
2 tbsp water
1 tsp cinnamon
Dash nutmeg
Pinch salt (or more to taste)
Puree the dates and water together in a blender to form a slurry.
Mix with the soaked buckwheat, apple, sunflower and pumpkin seeds, ground flax, raisins and goji, coconut oil and spices in a mixing bowl. Dehydrate at 115 degrees for about 10-12 hours, or until granola is sticky but adhering firmly.
Refrigerate in a sealed container till ready to use; this will help maintain crunch and texture!
*If you do not have a dehydrator, you can bake this in a cookie sheet for 2-3 hours at 200-250 degrees, making sure to check it and stir it periodically in your oven.
Serve with almond, cashew or other nut milk and fresh berries! Make sure to eat immediately after adding the milk, as the cereal will begin to lose its crunch.
